This slow cooker curry lentil soup cooks for ten hours while you do other things. You’ll come home to a delicious, tummy-warming dinner!

Some days just seem to go on forever. You look up at the clock and it says the same time it said an hour ago, and you know the batteries aren’t dead. But other days…

On other days, there just are not enough hours in the days. We run, run, run just to realize we still don’t have enough time to get everything finished. Those are the days this recipe was made for.

What Is Curry Lentil Soup?

While this does have some curry flavor, I wouldn’t consider this an Indian dish. It definitely has that sort of flavor, but I guess you could say it’s pretty Americanized.

The curry flavor here is mild and the soup is comforting. It’s filling and full of good nutrition. You can make it vegan/vegetarian or not, depending on the broth you use. It’s just a tasty, all-around lentil soup. It also makes a large amount so you can freeze some for future meals.

What To Serve With Slow Cooker Curry Lentil Soup

  • Flatbread is wonderful with this soup.
  • A green side salad.
  • Rice, either on the side or mixed in.
  • Ladled over a baked sweet potato or regular baked potato.

Other Methods For Making Curry Lentil Soup

  • Stovetop – You can make this on the stovetop in a large stock pot. Prepare everything according to the recipe, but instead of putting it in a slow cooker, cook it on the stove. You’ll want to keep the soup at a simmer and watch the liquid content as it cooks. You may need to add more.
  • Instant Pot – You can also cook this in an Instant Pot, but you’ll need to cut the recipe in half so it will fit. Sauté the vegetables directly in the IP on sauté mode. Then add everything else, secure the lid, and set the IP to high pressure. Adjust the time with manual mode to 10 minutes. Note that the older your lentils are, the longer cooking time they will need. If 10 minutes isn’t enough, simply replace the lid after checking them, and cook in 5 to 10-minute intervals until the lentils are done.

How To Store Curry Lentil Soup

This will keep in the fridge for up to 3 days. Any portion of the soup left over after that should be frozen.

How Long Can You Freeze Lentil Soup For?

This soup will keep in the freezer for up to 6 months. This is a great soup to freeze in portioned, single servings.

How To Thaw Lentil Soup

The easiest way to thaw this is in the microwave or in a pot on the stovetop.

What You’ll Need

Oil – This can be any oil you usually like to sauté with. I used coconut oil, but use what works for you.

Carrots – I used baby carrots because that’s what I had on hand. If you have full-size carrots, use the skinniest ones you have in the bunch. Peel them, and slice them thin.

Celery – Slice these thin.

Red onion – These should be chopped very small for a better texture in the finished soup.

Garlic powder – I used garlic granules because that’s what I had on hand. But garlic powder is what people usually have. Either will work.

Dry brown lentils– You’ll want to rinse these first and check for any dirt clumps or rocks. Rinse in a fine-meshed sieve or colander.

Curry powder

Ground cumin

Ground coriander – This is optional, but adds a nice flavor, even in that small amount.

Vegetable broth – You can also use chicken broth if you prefer. Look for broth with no added sugar or dextrose and opt for low sodium if you can.

Canned diced tomatoes – These are just plain, diced tomatoes in a can. Do not use fire-roasted tomatoes. Just the plain variety is what you want here.

FAQs

Do I need to rinse lentils before making soup? ›

The other good news: Lentils don't need to soak as beans do (though you do need to sort and rinse them before cooking). Different types of lentils cook in different amounts of time. Red lentils are the fastest cooking and they dissolve as they cook and make for a smooth soup.

Does lentil soup keep you full? ›

Lentils are a carbohydrate, but it's slow burning which means it keeps you fuller for longer. Studies also suggest that lentils are good for heart health. The added benefit is that they are low in calories with 116 calories in 1 cup of cooked lentils (which is roughly the amount per serving of this lentil soup).

Can you overcook lentil soup? ›

Yes, you can overcook lentils; they will become mushy. Much depends on the type of lentil you're using. Some cook quicker and hold their shape better than others. To avoid overcooking them, always follow the cooking directions in your recipe and use the type of lentils called for in the ingredient list.

Why is my lentil soup not thick? ›

Cook It Longer

Sometimes soup just needs to simmer longer to reach the perfect consistency. Check to see if the vegetables are tender, and then taste the broth. If the soup tastes a bit watery, give it more time.

What happens if you don't rinse lentils? ›

While not rinsing lentils may not pose an immediate safety risk, it is generally recommended to rinse them before cooking to ensure a cleaner and more enjoyable meal. If you have already cooked the soup, you can still enjoy it, but be mindful of any potential debris or grit that may be present.

Should you cook lentils before adding to curry? ›

It is common for dal or curry recipes to involve cooking the lentils separately, and then adding them to a fried spice and/or vegetable base. This is particularly common with long-cooking lentils like brown lentils or chana dal. However, beluga lentils are quick-cooking, done in about 20 minutes.

Why does my stomach hurt after eating lentil soup? ›

Eating lentils can cause gas and bloating because they're high in fiber that your body is unable to break down. While fiber plays a large role in supporting and regulating your digestive system and bowel movements, it can also produce bacteria that leads to cramping and gas pains.

Is lentil soup good for losing belly fat? ›

Lentil soup is rich in protein and fiber, which can aid in weight loss by promoting feelings of fullness and stabilizing blood sugar levels, reducing the risk of overeating.

Is lentil soup good for bowels? ›

Lentils are rich in a type of fiber that helps your digestive system work as it should and fuels good bacteria in your gut. Fiber may also help reduce the risk of colorectal cancer. “Fiber plays an important role in regulating our bowels and protecting the immune system,” says Homan.

What color lentils are best for soup? ›

French green lentils, otherwise known as lentilles du Puy, are smaller and firmer than their lens-shaped counterparts, which makes them the perfect candidate for a soup situation like this.

What makes lentils taste better? ›

If you don't have stock on hand, add onion, carrots, celery, garlic cloves and/or herbs to the pot. All of these are mild flavors that can jump in any direction depending on how you're going to use the cooked lentils.

Is it OK to leave lentil soup out overnight? ›

Food should not be at room temperature for more than two hours. Shallow containers or small amounts of hot food can be placed directly in the refrigerator or rapidly chilled in an ice or cold water bath before refrigerating. Cover foods to retain moisture and prevent them from picking up odors from other foods.

What is the white foam on lentil soup? ›

That means the foam will typically appear when making meat-based broths and, to a lesser degree, soups made from high-protein vegetables such as chickpeas and lentils. When those coagulated proteins cluster together, they can create air pockets, which is what causes the “sudsy bubbles,” says Trout.

What are the best tasting lentils? ›

Black Beluga lentils have the most flavor, adding a rich, earthy taste and a firm texture that holds up well during cooking. Black lentils will be ready in 20–25 minutes; however, they will fall apart like their brown, green, and red partners once you cook them for too long.

What to eat with lentil soup? ›

I love serving this lentil soup recipe with crusty bread for sopping up any extra broth. It's also delicious alongside a hearty kale salad, like this Sweet Potato Kale Salad.

Do you need to rinse a can of lentils? ›

Do you rinse canned lentils? It is not necessary to rinse canned lentils before cooking, but you can rinse them by emptying them into a strainer and under cold water. This can help to remove some of the sodium content from the liquid around the beans.

How important is it to rinse red lentils? ›

It's best to be safe and rinse and sift through them before cooking, because no one wants to break a tooth by biting down on a rock. Follow this tip: Give the lentils a good rinse in a colander to remove any debris and sift through them to be sure there are no hidden stones tucked among the legumes.

Should lentils be soft in soup? ›

Keep tasting your lentils as they cook to see if they're the consistency you want—more firm if you're eating them on their own or in a salad, and softer if they're going into a soup or stew. Never miss an opportunity to add more flavor to your lentils—they can take a LOT. Add a halved onion to your water/stock.
