In New England when Autumn comes one of the special things that we look forward to is the list of foods and desserts that come along with the season. That continues right on into the winter. I get excited and one of the things that I think of making are these Roasted Spiced Nuts.

I think it’s because of the spices on them that are typically like other autumn foods with the Cinnamon, Nutmeg, and cloves… But you can certainly eat them year-round if they become favorites on your Keto snack list.

Of course, nuts, in general, are great but these ones are delicious and they will make you think that you are eating gourmet nuts from some expensive shipping company. Instead, they came out of your kitchen. Best of all they are low carb and sugar-free!

Oh, and did I mention that they will leave your kitchen smelling fabulous? The smell alone is going to make you want to pop these in your oven asap.

To make sugar-free spiced nuts can use any kind of nuts that you have or that you like. No matter what kind you choose to use it will be so delicious and will be a hit with your family and friends as a snack or as a welcome treat to any party! They also make a great gift, you can package them up and give them to your friends or family.

Spiced nuts are a combo of autumn flavors of Cinnamon, Nutmeg, and cloves along with a sweetness which creates a yummy, delicious tasting and smelling appetizer, that are slow-roasted in the oven.

They are a favorite at parties and so easy to prepare. It only takes 5 minutes to make them and then they go into the oven for about 3 hours. When they come out they’re full of flavor, a little sweet and a little spicy.

What Do They Taste Like?

Spiced Nuts taste kinda sweet but kinda like spice, a warm spice not spicy. Keto Spiced nuts are the same, it’s just that the sweet flavor does not come from sugar, it comes from Monk Fruit which does not have any carbs like sugar.

Are Roasted Nuts Healthy?

Nuts, in general, are very healthy because they have lots of vitamins, protein, fiber and heart-healthy fats that are good for you.

Both roasted nuts and raw nuts both provide a lot of health benefits even though they have a lot of calories. Eat them in moderation if you are trying to lose weight even though these Keto Roasted Nuts are so good that you may be tempted to eat more than you should in one day.

Roasting the nuts cooks them evenly with a dry heat that improves the flavor, texture, and their aroma. It also alters the way your body digests them, it’s easier for your body to digest roasted nuts than raw nuts.

It’s a great thing that you can have these sweet-tasting spiced-nuts and they fit right into your Keto diet because they are not made with regular sugar which we all know is high in carbs. Instead, we use Monk Fruit which is a sweetener that’s Keto friendly without the carbs. And it tastes good too, we use it a lot in our baking cookies…etc.

Using the ingredients in our recipe these spiced nuts are only 2.3 NET Carbs per serving!

  • Almonds – One choice for your nut mixture

  • Monk Fruit – A sugar substitute that is healthy, and converts 1 for 1 like sugar and has zero net carbs
  • Cinnamon – My favorite spice on the nuts, like apple pie
  • Nutmeg – Another great choice for nuts, good in Autumn foods
  • Cloves Another good choice, an Autumn flavor

What Nuts Can You Use For Roasted or Spiced Nuts?

When you make these Keto Spiced Nuts you can really use any nuts that you want to and omit whatever ones that you do not want to use.

Some possibilities of nuts to use are:

  • Peanuts
  • Almonds

These 5 kinds seem to be staples in Keto Roasted/Spiced Nuts, plus they are staples in my kitchen.

It’s hard for me to pick favorites because I love nuts and I add them to so many things, but if I were to choose I think that my 2 favorites for this recipe are: almonds, pecans and cashews, even though they are all good.

It’s best if you can use nuts that are not already roasted because when you flavor them with your spices they will pick up the flavors better and will roast better.

Do You Have to use Egg Whites?

The egg whites are what coat your nuts and help hold the spices on them. The monk fruit and the cinnamon and other spices will not be able to coat the nuts. Without the egg whites, it would just be a tray of nuts with spices all over the tray instead of coating them.

If you can’t eat egg whites for some reason, you could try to use something called Aqaba, which is the liquid from a can of chickpeas….crazy but it works too.

How to Make Keto Spiced Nuts

Now that we have talked about what kind of nuts to use and the fact of how healthy nuts are, let’s see how to make them into this amazing party favorite.

First, preheat the oven to 200 degrees so you can roast the nuts slowly.

In a bowl beat the egg whites until foamy.

Toss the nuts in the egg whites until evenly coated.

In another bowl, combine the Monk Fruit and spices.

Then add the nuts and toss until well coated.

Spread the nuts evenly on a baking sheet.

Best Tips for Making Roasted Nuts

It’s best to start with unsalted, raw nuts if possible, that way they are not already roasted or salted. But when I don’t have them in the house I use whatever ones that I have. You can use almost any kind to make Keto Roasted Nuts.

Season and roast the nuts a few days ahead of time before you want to serve which will allow the flavors to really soak into the nuts.

Let the nuts cool off completely before wrapping them up or putting them in a tight-fitting container.

If you don’t want to roast them in the oven you can also roast them at low heat on top of the stove but if you are going to do that you will have to stir often which could tie you down to the stove for several hours. This way if you do it in the oven you can go around the house doing other things with your time only stirring them once.

Different Variations of Spiced Nuts

You can experiment with this recipe using different types of nuts….you can’t ruin it….it’s entirely up to your taste buds. You can use 2 types together or 3 types together or more if you would like to.

A couple more choices to add would be pistachios or pumpkin seeds.

Then if you like them to be spicy add some cayenne pepper to your mix.

After you make these Low Carb Roasted Nuts you will undoubtedly have leftovers and will want to keep them fresh so that you can snack on them often. We make a big batch and they make a great low carb snack when you are craving something sweet.

You can store them in a glass jar or in an airtight container and they will keep for a month or two, that’s if they don’t get eaten up way before then.

A cool and dark place is the best place to store your spiced nuts, like a pantry or kitchen cabinet.

The refrigerator or the freezer, in general, is a good storage place to make nuts stay fresh for a longer time than if you were to leave them on the counter, and that include all types of nuts and it doesn’t matter if they are cut, chopped, sliced or whole.

Can I Freeze Spiced Nuts?

If you make a batch or two of roasted spiced nuts and know that you won’t be finishing them in a month or also if you are not giving them away to anyone, you may want to freeze them for safekeeping. That way they will stay fresh longer. Just be sure to freeze them in an airtight container.

The nuts will stay fresh in the freezer for up to 1-2 years, but we all know that they probably won’t be there past a month or two because if you know that there is a yummy low carb snack in there you will be dipping into that container weekly!

Ingredients

  • 2 Egg Whites
  • 1 cup Almonds
  • 1 cup Cashews
  • 1 cup Walnuts
  • 1 cup Pecans
  • 2 cups Monk Fruit
  • 2 tsp Cinnamon
  • 2 tsp Nutmeg
  • 2 tsp Cloves

Instructions

  1. Preheat your oven to 200 degrees.
  2. In a medium-size bowl beat egg whites with an electric mixer until foamy.
  3. Toss the nuts in the egg whites until evenly coated.
  4. In a large bowl combine Monk Fruit and spices.
  5. Add the nuts and toss until completely coated.
  6. Spread evenly on a baking sheet.
  7. Bake for 3 hours, stirring halfway through baking.

If possible start with raw nuts and unsalted nuts that way they are not already roasted. But sometimes you need to use whatever nuts you can find in the store or what you may have in the house when you feel like making them.

If you plan, you can season and roast your nuts ahead of time so as to give them time for the flavors to really soak in, then serve them.

Make sure to let the nuts cool off before putting them in a container or glass jar and don’t forget to tighten the lids.
