i had shared quite a few cake recipes till now but i was getting a lot of requests for a simple and plain sponge cake recipe. hence i thought of sharing this multi-purpose plain cake recipe which can be used for myriad flavours. as matter of fact, i was planning to share this recipe in a cooker and not with a conventional oven. but at the last moment decided to go with traditional recipe and delayed the cooker sponge cake. having said that, i have already posted a chocolate flavoured cooker cake and can be referred on how to use the cooker to bake the cake. moreover, once the cake is ready, it can be used for any flavoured frosting of your choice if you need to.

anyway, some tips and suggestions for a perfect and soft eggless sponge cake recipe. firstly, i would heavily recommend using the exact amount of proportion for each ingredient specified in the recipe card. note that each ingredient with the supplied proportion is critical for the best result. secondly, the key ingredient for a soft and spongy cake is air and hence beat the batter as much as possible to incorporate the air bubbles. you can use a cut and fold method using a spatula or hand blender for the same. lastly, in this recipe post, i have used plain flour or maida and few may have a concern regarding it. alternatively, you can also use wheat flour to make the same recipe.

Ingredients

  • ¾ cup (150 gm) butter, room temperature
  • cup (415 gm) sugar
  • 2 cup (510 ml) milk
  • 1 tsp vanilla extract
  • 3 cup (465 gm) maida / plain flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Instructions

  • firstly, in a large mixing bowl take¾ cup butter and 1½ cup sugar.

  • beat well until the sugar and butter turn creamy and soft.

  • now add2 cup milk and 1 tsp vanilla extract.

  • mix well making sure everything is well combined.

  • further, place a sieve and add3 cup maida,1 tsp baking powder, ½ tsp baking soda and ¼ tsp salt

  • sieve the flour making sure there are no lumps present.

  • mix well until the batter is a smooth consistency.

  • transfer the cake batter into the square cake mould.

  • place the cake tray into the preheated oven. bake the cake at 180 degree celsius or 356 degrees fahrenheit for 40 minutes.

  • finally, enjoy eggless sponge cake with frosting or as it is.
